I thought it had to do with the oils on yours hands? The oils and then the heat baking them into the SS.
The colors in heated SS are the behavior of the blend of iron, manganese, nickel and chromium that make up dozens of stainless steel alloys. Skin oils would burn away at lower temperatures than are required to bring out the colors inherent in the SS.
