Using 195/60 Tyres on a Jazz?
I have noted the advantages and disadvantages of using 195/60 R15 tyres on a 2008 European Jazz with original alloy rims where the factory recommendation is 185/55 R15.

The 195/60 is much cheaper, provides better wear and gives a more comfortable ride. However it makes the speedometer show about 3% slower than actual speed and due to the tyre being heavier and a little taller might give marginally less economy, acceleration and roadholding. Some have commented that with a heavy load on an uneven road surface there is a higher chance of tyre to body contact.
My question is are there any safety, legal or insurance aspects anyone is aware of when using a non standard tyre such as the 195/60 R15 or is this just a matter of personal preferance?

I'm using 195/55 Kumho rubbers myself. There's going to be a speedometer calibration variance, that's for sure, and it'll be more manifest at 195/60 since the effective overall diameter is larger than stock.
There are lots of wheel size calculators online that'll help you find out the deviation on the new size you're planning...but it looks like you already know what you're in for.
Apart from that it's really just a preference choice I believe.
