If you're coming in contact with the paddles you've got your hands inside the steering wheel rather than sliding around the outside. That will get you in more trouble yet.
As far as rpm is concerned the maximum speeds in gears are 30, 60, 90, and something like 130 and 170 in 4th and 5th. Which is why on track you only use 2nd, 3rd, and just briefly 4th on long straights. The automatic is geared for mileage.
