I have found a couple of places that sell OE style rotors. One of them carried Brembo blanks. But like in the thread that I made a week ago. Its pretty limited right now, I know Tirerack.com carries that stainless lines, and the brake pads on the Fit can also be cross referenced to a base RSX. And I believe the front rotors can be cross referenced to the 99-00 Civic SI.
I know all of this because this is my next project, so I have done a little bit of research so far.

I had slotted and dimpled EBC rotors on my Passat. As you know there is a lot more direct "feel" in a Fit vs. Passat, so be aware that you will feel those slotts on the pedal and steering wheel under braking. Braking with wet rotors in the rain drasticly improved, so did under extreme high heat with gases evacuating better too. As long as you can live with "the bad" I'd say go for it.
I am sorry if I am telling you something you already personally have experience with, but I felt it would be an important thing to know if you do not.
I am sorry, but I do not know anything about cross reference with other Honda's. I could measure my '90 CRX Si today though!

Hey, you're doing that group buy on rotors right? I may just have to jump on that deal. How much shipped to 11788 USA?

Pedal pulses under light and medium pressure and there is slight feedback to the steering wheel. There is also noise similar to worn brake pads as if they just started touching metal to metal. No squiking, just light metal grinding.
I only experimented with EBC slotted and dimpled rotors and EBC Green pads on 2000 Passat V6. Fit has a lot less soundproofing, so noise might get to you.
As a former mechanic I am "trained" to hear and feel everything, so I do notice a lot more than average driver! Call it professional deformation!
If you listen your stereo louder than me you might not notice the sound, but will "feel" them. I usually stay between 15-20 on stereo volume.
Would I do it again this time on the Fit? No because it is A/T and I do not plan on pushing it. If it was M/T and I intended at least to autocross with it or go a bit harder in the canyons, yes!
