What happened to In and Out??????
In-N-Out uses the Kennebec variety of potato for its fries and prepares them on-site as opposed to purchasing them pre-made from other companies.[3]
[13] The company's french fries are cooked in "100% pure, cholesterol-free sunflower oil."[14] Fries can also be cooked to order, with cooking times ranging from "light" to "extra well done".[15]

Does it really matter? The fry is just a utensil to move ketchup to my mouth.
I have always been partial to the "steak" fries that The Hat (a local chain) used to sell. But these days, I usually end up with tempura-green-bean fries or some other nonsensical, "healthy" alternative to fries. As I devour a garden-patty, lettuce-wrapped "burger." 20-year old me cannot believe what has become of me 20 years later.
