Even with 205/50R16s, you might have a bit of a nip when ever you hit a hard enough bump at stock height. GEs are a little more sensitive with lower offsets and wider tires than GDs BUT somewhere in the +42mm range is generally safe on stock suspension, +45 or higher when lowered while running 205/50s.

If you have little to no luck with aftermarket wheels then do keep in mind that factory (BMW-) MINI wheels are 4x100 and have the exact same hub bore as the Fit. The first gen R50/R53 body for the hatches was M12 and should work just fine with cone seat lug nuts.
The second gens (R56 body for the 3 door hatches) however, have M14 bolts and I'd recommend getting a lug nut with a shank to fill that space between our wheel stud and the larger lug nut hole bore. I used Gorilla Automotive's 41137ET lug nuts on a set of R56 Bridge Spokes and they work fine.
