Lifted Fit, Largest Tire Possible?

I bought a lift kit for my Fit and I'm looking to get a set of all terrains on her. There are several manufacturers that produce all-terrain tires in the size I am looking for (205/70/15), which would be ideal, however, I have checked every possible tire store in Canada and I have not found a single option in stock. There are some slightly larger options available ex. 215/75/15 which is pushing it a bit. I guess what my question is.... What is the largest tire anyone has been able to put on their fit? Lift or no lift, just curious about what is possible. Thanks.
P.S Lift is rated for a 1.2 inch lift, however, several others that have installed it have actually observed a 2+ inch lift

First, I have no direct experience with changing tire size on a Fit, so hopefully someone else will help you. I do have indirect experience (i.e., observing friends with more money than sense) with the effects of lifting and upsizing tires on other vehicles like Subie Crosstreks and various Jeeps.
The basic summary I would make is that small changes are sometimes ok but major changes, such as going from the stock tire size on a second gen Fit to something like 215/75R15 do not work well without extensive powertrain modifications.
If you check a tire size comparison website you'll see that a 215/75R15 tire is roughly 3.5 inches taller and 1.25 inches wider than stock. I seriously doubt that would fit without major changes the fenders (especially if you want to turn your front wheels or have any suspension travel), even with a lift. A 205/70R15 would be a bit smaller and narrower, but still much heavier than a stock tire if you change to an all terrain style tire.
More importantly, if you manage to fit an oversized, heavy tire to a Fit it will go from slightly underpowered (in most people's opinion) to driving like a 1970's era Ford Pinto unless you figure out a way to dramatically change the gearing. If you have an A/T it will suck: your ability to start, maintain speed, and stop will all be negatively affected. If you have a manual it will be difficult to start without major revving and slipping the clutch and I doubt you'll be able to use 5th gear, even on flat ground. Merging into traffic will be a new underwear experience, all day every day.
So, while I can understand why folks want a bit more ground clearance, I wouldn't advocate big changes to stock tire size.

Larger tires would help with top speed (it'll just be harder to get there!), but I wouldn't dismiss any of what @Drew21 said about the negative implications. I'm currently working a project with a gent doing a resto-mod on an AMX (he's 100% the brains and experience, I'm just extra hands) and he's voiced all of Drew's concerns in regards to his past and present off-road builds that he's done personally.
I'd be apprehensive to put larger tires on the fit. I put on larger wheels (16x7) and more grippy tires (AA traction rating) and I have to admit to increased load on the driveline. The brunt of the load is seemingly taken by the clutch in my case, as evidenced by premature clutch wear (compressed springs). I'll take responsibility for my crappy clutch-work too, but the fact remains that I increased rolling resistance and didn't have the budget to offset it by reducing wheel weight.
If OP wants to lift the Fit though, it can be done!!
