Sudden iPhone Music Plays on 2018 EX-L
We have a recurring hazardous issue with our iPhoneX plugged into the USB port on our 2018 Fit EX-L.
Typically after about 20 seconds of starting the car with the iPhone connected, an iTunes song from the phone will start playing spontaneously. But sometimes it can happen just driving much later also. This is hazardous because on a couple of occasions when it suddenly played the sound the volume was so loud it scared the driver!
Any suggestions on how to stop this defect either on the phone or the Fit without impeding normal music or navigation functions?

Only reason I ask: I suspect this is a case of the head unit software not playing nicely with the phone software.
Honda will probably tell you to try flashing the phone's software, but beyond that, nothing they can do.
This is nothing new. I upgraded the head unit in my '16 LX to aftermarket after all kinds of problems with integration. Specifically, I'd have an (approved by Honda) generation ipod playing tunes on a cross-country trip, and the entire head unit would suddenly freeze - no sound, and no input possible whatsoever. Disconnecting the ipod didn't help. Only shutting off the engine and restarting got the tunes back. Honda gave the same answer as above. Needless to say, not helpful on a long trip.
That was the last straw. Now running a Sony aftermarket with no such shenanigans.

I did find a lot of information online about the issue with iPhone spontaneously playing music and I'm going to try fiddling with some settings.
The problem with such things is that one large corporation will blame the other and the users pay the penalty for their mutual lack of product quality.
I spoke with both Honda and Apple about this dangerous defect. Honda had no suggestion other than to take it to my dealer at my expense.
I was on the. Phone with Apple for about half an hour and they reviewed a number of settings on my iPhoneX. I’d already disabled handoff and cellular for Apple Music. And I don’t subscribe to Apple Music streaming. They did suggest disabling an accessibility setting for music, but today I confirmed that the music still starts playing spontaneously while I’m driving and also starts immediately after my Hey Siri command.
So the dangerous defect continues with my Apple iPhone and HondaLink!
