Knowing that honda doenst offer a leather option for the fit, has anyone tried to change their upholstery to leather or something else? If so, could you give details on the cost, and any changes to interior space if any, and would the magic seats not fold flat anymore?

Any car upholstery / auto trimmer can reupholster the factory seats. Biggest factor is the cost of the leather you choose. Most factory leather seats use some vinyl sections to reduce costs.
Cost wise I'd expect around the A$2,000 mark. Depends if your doing the rear seats as well (then even more).

Leather Upholstery
Just got my Jazz seats upholstered with leather. Cost in Singapore ranges from S$800 to S$2000. Really depends on who you go to and the quality of the leather or vinyl. Got mine done through my dealer for S$800. The fabric covers are replaced with the leather ones and the seats fold normally. No problems faced.

I had the leather seats done on my Jazz at the dealership before I picked up the car. The leather was part of the dealer's incentive that I've negotiated. The seats fold down fine, but needs a pushing for locking down flat.
