Anything pre-2014 generally. New Honda's have gone soft, even after driving the 2019 Accord Manual with the K20C, the shifter (which Hondas are known for) Feels like a cheap $2 plastic sim shifter. No V-Tec sound. I mean the new Civic just coming out, doesn't even come in a manual at all. Oof.

So honestly, my Fit. Best all around. Loud, vibratey, Great Honda intake sound. Seriously good manual, and of course the insane cargo.

Handles incredibly well. Very stiff chassis, combined with the wacky weight distribution with where the gas tank is, makes for an excellent FWD experience. Having the ability to control turn in with your throttle isn't something you'd expect from a stock FWD. Usually lift oversteer is very desirable, and has to be tuned in with pretty big suspension tweaks. Having owned a '99 Miata, I'd say my Fit handles pretty much just as well, save for the Miata having less body roll. All I can say, there's a good reason Matt Farah bought a Fit after taking one to the autocross.

Something not a lot of people talk about is how good Fits are in the winter because of that weight distribution too.

That being said, dream cars
Factory: Probably the 2013 Civic Si 4-door. Looks great, has a K24, and a buttery manual. But they are really starting to go up in price sadly.
For a build: 1st, 3rd, or 4th gen Civic with a B-Series swap.

For luxury, I really enjoy my 2005 Accord V6 6 speed.
For joy rides, I love driving my 2004 S2000.

And I regret my old 2000 Civic coupe with an ITR motor swap. Used that car or racing. Sadly, I stopped racing and sold the car to a friend, who still races it many time per year (actually, more then I ever did!).
