A little something from the manual...
"When you select * or * (in the manual it pictures the defrost symbol or combo feet/defrost symbol where the asterixes are), the system automatically turns on the A/C. This helps to dehumidify the air and to defog the windshield. In either mode, you cannot turn off the A/C. When you switch to another mode, the A/C returns to its original setting, either on or off, as indicated by the A/C indicator."
So I guess this means I have been inadvertantly driving around with my A/C on for months since I prefer the defrost setting over having air blowing at me.
Hopefully this will mean better gas mileage (though mine was already was decent at 34).

Yeah, a small two wire connector from the back of the controls that activate the AC. It's simple to disconnect and can be plugged back in later if you change your mind. Although if there is heavy fogging, you can turn on the AC yourself by pushing the button and then turn it off when the fog clears. I leave mine on defrost for the same reason you mention - no wind in my face wanted, thank you very much!
As others have noted, this is the way cars have been for quite a while and there is an easy DIY with pictures showing how to disable it on the Fit. Takes ten minutes to do and is 100% reversible - Tools required:
1 screwdriver (to loosen just 1 screw)
1 popsicle stick (to help pop off cover)
2 fingers (to disconnect 1 plug).
