OEM for a Fit doesn't exactly mean that Honda made the parts. It means that they are made by the same manufacturer that the original part was made by. I don't know if Honda contracts out parts but most car companies do that.

The term OEM is used a lot in computers, too. The manufacturer can be anyone, but it will have the computer's brandname slapped on it.

Try www.wikipedia.com as well. For definitions, it is really useful.

I think Honda is not considered and OEM (unless it is building
a product for another company) but is a value added reseller (VAR).

Dunlop and Bridgestone are considered OEM for Honda.
Also the stereo/head unit/radio is probably Alpine or Pioneer
and are OEM for Honda. Also the windshield glass is probably
manufacturered by someother company.

Ditto. Those "other" companies are the OEM. Not Honda. If Honda manufactures something for a product that belongs to another company, then they are the OEM as well. For example, a non-Honda products that uses a Honda engine. This will make Honda the OEM of the engine that the product uses.

An OEM part usually means something that is not intended for end-users, as they are built for value-added resellers (VARs). You can get them at cheaper prices because they usually won't include any manuals, nice packaging, and sometimes even warrantee. These parts meant to be put back onto the assembly line to compose the final product.
