Hello and welcome to the area! I usually autocross locally and looking to transition to track days myself... Just haven't committed to doing so quite yet.
For local autocross events I'd look into SCCA, the Houston BMW Club and Porsche Club for events. A little note to the latter clubs, membership in either club allows you to partake in the other. So as an example, my $48 buck (last time I checked) BMW club membership allows entry for both BMW AND PCA events... And of course vice versa.
Our usual venues are Houston Police Academy on the North side of Houston near the George Bush Intercontinental Airport on the corner of Aldine and Rankin, GrandSport Speedway in Hitchcock just south of Hwy 6 and 2004 near the old blimp hanger base, and on occasion a friend though the SCCA hosts a "track attack" at MSR Houston which is basically a higher speed autocross but on a road course.
For track days its a similar case with the above clubs along with NASA and other groups like Driven & Blessed, Chin Track Days, and so on. MSR Houston is one of the usual go to locations for their events and occasionally Grand Sport will have an event going on though its seen more as a test track with less amenities than MSR. There is also a kart track that events get held at in New Caney if I recall correctly... Forum member @Gkay.5 should have more detail on that.
Also, side note to your CAN issue regarding your AIM dash. While I'm not familiar with the system I know the personnel at MSR Houston might be able to give you some insight if needed semi-locally. They've built a few B Spec Fits including the GK Riley Salyer used to win the SCCA's National Run Off Championship in 2020.
