Oil

Is this way too much oil? Busted the oil pan, had it replaced and when we got it back it’s this far over the fill line

My recollection is that there is 1 quart between the dots, but you should confirm that. If I'm correct, you have around 1 quart too much, which is a significant amount in an engine that calls for a bit under 4 quarts.

If you're asking what you should do, I would try to get closer to the correct amount. If you have the right size tubing you can suck oil up the dipstick. Alternatively, you can loosen the drain plug partially and let some drip out, tighten the plug, check the dipstick, and repeat as necessary. A better approach would be to drain into a container you have marked for 1 quart. If you're careful (e.g., clean around the drain plug before letting your nice clean oil run all over it, drain into a clean container, etc., you should be able to reuse drained oil if you go too far.

It's 3.8 quarts with new oil filter. Just drain it down to the top hole of the dipstick.
