Yes and yes. Any weight savings increases MPG. The seat is held in by bolts, obviously. If you undo em all, the seats come out. Have fun. I wouldn't bother; the seats are in my mind a fairly essential piece of equipment.
You will definitely be able to accelerate with less throttle, so it does help fuel mileage if you do most of your driving in an urban environment... Lower the air pressure in the rear tires if you do it or the ass end will dance around a bit when you least expect it.
Removing the rear seats would reduce the 38% 953 lb weight of the rear of the car by over 20%.. That would mean you can drop the rear tire pressure 6PSI without an increase in rolling resistance.
