Which tires to run with 16" rims?

Which tires to run with 16" rims?
I bought my 2007 Honda Fit Base three weeks ago and it is basically everything my 2016 Ram isn't! Nimble, peppy and cheap to feed!
I bought a set of 4x100 American Racing ESTRELLA rims. They are 16" x 7" rims. As far as I can tell, the offset is 40
My Honda Fit is 100% stock mechanically, so I am wondering what tires I should mount on these rims to not get any rubbing?
I've read people running 205/45/16 and say it rubs, some say it won't.
The car will regularly have between 300lbs to 600lbs of passengers.
Should I just get 205/45/16 or should I play it say and get 195/45/16?
