Odometer/Speedometer accuracy
I always compare my Fit's speedo reading with the radar-based speed indicator signs you find here in L.A. It's consistently somewhere between 1 and 2 mph HIGHER than the radar indicates.
I also compared it to the Vehicle Speed meter located on the radio display when you activate the diagnostic mode, though it's in kph. I traveled at 100 kph and the speedo SHOULD read 62 mph, but it read 1 mph higher at 63 mph.

I don't think you'll get much out of comparing your speedo to a GPS reading. Honda likely errs on the upper end, as CFMT found, and that built-in error is probably within the accuracy of most GPS ground speed readings.
I went on a short 300 mile road trip yesterday which allowed me to use my cruise control uninterrupted for a few miles at a time. I'd settle in @ 75MPH according to the speedo and my garmin GPS reflected that as well. once in a while I'd set the CC to 70 or 80 and I'd usually get a +/- 1 MPH discrepancy. this was mostly on a straight freeway which was mostly flat or a few rolling hills. so I'm going to go ahead and conclude that our speedos are pretty darn accurate.
Speed/odometer accuracy
I did a ~200 mile loop once with two GPS receivers in the car and the odometer was within 1 mile on all three instruments, so that's about .5% off.
The speedometer is remarkably accurate too, usually within 1 mph of what's on the GPS. I think it's the most accurate speedo I've had yet....
