iPod touch - hold the lock button till the shutdown slider appears.

iPod classics - lock and then unlock the iPod then press and hold the play and center button simultaneously for 5 seconds.

IPod touch - forced shutdown - hold the home AND lock button until the screen goes blank, release both immediately. This method forces the iPod to do a clean up job when you start it back up... and it will take a lot longer than a normal boot up.
