3rd Generation GK Specific DIY: Repair & Maintenance Sub-ForumThreads discussing repairs and maintenance you can do yourself on the 3rd generation Honda Fit (GK)
Yes I've seen how the cable connects but i can't remember offhand. One of the threads has instructions for removing dash panels. You may be able to see a lot simply by removing the glove compartment. I can't remember. Maybe it will come to me later. What I do remember is there is a cable from the knob to a something that moves behind the dash. Could be the cable came loose, and end became detached, fell out the thing it fits into at the end.
I think this is a known defect. I have been to the dealer 3 times already for the same exact problem you are describing. Prior to last time they told me that some cable under the dash was in the way and the know was not turning as it should. Last time this happened they would not tell me anything they found. My car is getting close to the 36K end of warranty period but I now have a history of repairs for same issue so if it happens for 4th time I will go to dealer to fix for free if i still have this car. I am also going to write a detailed letter to Honda corporate telling them that I have a lemon. I had many quality control problems with this car. I think it was made on a Friday at 4:59 pm. LOL
The 2015 Honda Fit has a manual climate control. But it's a bad design. I traded my car in and got a Honda Accord EX that has electronic climate control. I have not had a problem like this with the Accord. I have no idea if there is a solution but I changed the car and it worked LOL.

We just had our climate control replace in our 2018 for the same reason. The climate control selector broke inside and was stuck on hot last Summer. Get ready for a $3,500+ fix from Honda. It's not a cheap or easy fix sadly. The whole dash has to come out, and the part was replaced. It works fine now.
$2,400 of it was for labor alone. So you can see that is is no easy job to tackle.
I got a 2017 fit SE (exclusive Canadian trim basically a EX without fog light and sunroof) with manual transmission last month. The temp dial was springing back up on the cold side and was pushing barely any heat. The used car dealership said they would fix it. I got the car they told me "oh it just needed some lubrification”. But a couples of days after I got the car officially, turn out, no, it was not fixes.
Coming for a 2007 FIT I owned for 17,5 year, in which I upgraded the radio myself, I knew how Honda manual HVAC dial works I had removes the HVAC-head unit a couples of time in my former GD3 (and BTW, the 2007 HVAC dial felt less cheap and the 2017 one and never cause any problems. the GK5 interior is superior in many aspects but not this one). I had an idea that it could just be a cable adjustment problem.
Looking around the interubes, I found a YT video and this thread that helped. So, I removed the glove box and plastic trim and mess around with the plastic flap mechanism. I unscrewed the lever install it at fully hot and screw it back and it solve the problem (they indeed lubricate it was all gummy and sticky, but it did not do anything). It still springs back up a little on the cold side, but it does not really change the cold temp. If anything, it seems more like the cable length is not properly choosen with the range of adjustment of the flap. But now It seem I get full heat.
Although because of the engine that is more efficient than the old 2007 L15A, it does not heat as much and as fast. Honda should have included some small electric heater to help (I know VW does this). But hey, now I have heated seats! A thing I did not have for 17,5 years lol so still an upgrade. Hopefully, the cable does not brake or anything.
