I've seen packages of LED light strips for sale at walmart for lighting up the inside of one's car. Would this be a decent starter for one who is new to modifying? Also, can it be plugged into the same place as mentioned above (where the mirror adjustment fuse goes) ?

Yes but look on Ebay. They are much cheaper. I would get 12 inch ones. To connect pull off the cover for fuse panel onthe bottom left of dash. There is a plug there with a pink and blue wires. Those are for dome light circuit. Connect your LEDs there is you want to have them work with dome light.

Welcome. They are directional so if they don't work switch the wires.

Anything you can think to do to a Fit has been done and there is likely a DIY thread here to show you how to do it. This is where I get my info.
