You need to physically go to the shop and talk to the guy face to face. Not in a threatening way, but to let him know you're serious. Tell him details about your car and the goals you hope to accomplish with your dyno session. In any case, you're still a paying customer and they're losing business by leaving you hanging.

It's a lot harder to ditch/cancel on someone once you've spoken IRL.
