What was replaced?

Was the cooling system properly "burped" to get rid of air?

Could be a radiator issue

I had a similar issue on a 1974 Dodge. The problem turned out to be a clogged radiator. Sediment and debris had blocked the core of radiator.
Mine was cleared by having it “rodded out.” I am not sure if this technique can be used on a GD3 radiator though.

Why ask here? Go back to whoever put you a head gasket. Apparently they failed miserably. Change that, go to a mechanic instead.
