The oil percentage isn't some magical or detailed analysis of your oil condition. It's just a simple/dumb algorithm tracking a few metrics -- engine RPMs, engine temp, ambient temp, and time -- to guesstimate remaining oil life. It knows nothing about the actual condition of your oil, or even if there's any oil in the engine at all.
If you think the oil looks dirty, you should change it regardless of what the oil percentage is. Better yet, if you're really concerned you can get an oil analysis run to tell you the true condition of your oil.
As for "a lot of air through my oil fill hole," do you mean that you have pressure in the crankcase when the engine is running? That's a good sign that your PCV (positive crankcase ventilation) valve is plugged or otherwise stuck.
Note that these issues may be linked: a stuck PCV valve isn't great for your oil or engine.
