Paddles do help with fun-level, or passing. Here's what I've found with my '09 Sport AT...

In "D"
- blip the down-paddle to drop top lower gear (5th to 4th and I believe also 4th to 3rd). Helps for passing (serious needed sometimes).
- Will auto shift up to 5th once engine load is reduced.
- IF you're hard on to the (gas) pedal, it is reluctant to shift back up to 5th (so much so I'm not sure if it's a problem or not).

In 'S'
- starts off as fully automatic BUT only uses the 1st through 3rd. It'll wind up to 6200 rpm before auto-shifting into 4th.
- Once you hit either paddle (up or down) then it's all manual shift with paddles.
- two overrides 1) around 6200 rpm will auto shift up, 2) when slowing down, will auto shift from whatever gear to 1st.

Around 4K rpm it is "relatively" peppy. Way more fun than straight auto, but I've still been schooled by a minivan on an on-ramp.

I use them all the time
I don't wait till 3rd gear
The Fit is a surprisingly well handling car without any mods
The paddle shift adds to it

Although I'm looking for something to add a slight HP increase

Useful mostly for driving in a hurry on twisting roads.

I found that using the paddle shifters for one tank of gas gave me an overly optimistic MPG reading on the dash gauge versus the hand calc'd miles / gals. For awhile, I really thought I was onto something. I can't point to a specific spot on the attached graph but I track it and know it doesn't improve gas mileage. It is more fun except in a tight turn.

The drop-off this winter is significant: very cold weather since December here in Pennsylvania and 205/50-16 tires on heavier 16x7 wheels has hurt MPG. Still messing with tire pressures.

In the end, paddle shifting was a pain for me, especially in tighter turning. The "Big D" is my default although I use the downshift paddle a little.
