Quick, possibly dumb, question, does the knob thread on?
I see there is a bore towards the bottom that I assume is to securely lock it in place, but wasn't sure of that's the only thing holding it in place.
I tried a "universal" knob once a long time ago that didn't thread on, only had that bore, and it was the worst thing I experienced.
It would constantly come loose.

Your best bet, if you really wanted a blue one, would be to purchase a Spoon Sports aluminum shift knob and have it anodized.

Also, that's not a dumb question at all! The Spoon Sports shift knob does indeed thread onto the shifter and uses a set screw to hold it in place.
The set screw also allows you to adjust the height of your Spoon Sports shift knob because you can thread on the shift knob as much, or as little, as you like onto your shifter and then set it in place with the set screw.
I'm also guilty of this.

Would you give us some more details/words that compare the feel, of the brake and clutch pedal of stock vs after the work you've done?

It's not a night and day difference, but it has certainly made the driving experience more pleasant.
Compared to the stock brake pedal feel, the brake pedal is now much more firm after replacing the fluid.

In short, Endless RF-650 is one of very few fluids that doesn't suffer from severe compressibility issues after hard usage.
